Ingredients:
White Distilled Vinegar, Jalapeno, Serrano, Water, Tomatillo, Lime Juice, Salt, Garlic, and Spices
I really think next time I get some of this sauce, I will need to order four bottles. Maybe I can convince Chris, owner of Wicked Cactus Sauce, that they should make this sauce available in a bigger size. I haven’t even had the sauces I got from WCS a week and I have already gone through both the Wicked Cosa Nostra and this sauce, Viva La Raza. It’s not because I shared with people. Hell, this sauce was so good, it made me a stingy man. Usually, I share. But, I kept this to myself after I trying it for the first time. It’s that good!!!
Viva La Raza has a light green color to it with bits of seeds, spices, and garlic floating around in it. Seeing that just makes my mouth water. The consistency is a bit thicker than Wicked Cosa Nostra. But, I still think it could be a little thicker.
First time I tried this, it was along side with Wicked Cosa Nostra on some carnitas and it complimated it well. I could taste the jalapeno mixed with the vinegar and lime juice right off the bat. The garlic makes a strong presence in this sauce after the vinegar,jalapenos, and lime juice. I could not taste the serrano in it. Also, I think the salt is not needed.
Overall, the sauce taste wonderful and goes great on all the white meats. It didn’t seem to compliment the beef dishes as well. But, it didn’t hurt them either.
